Schiaffoni are big, smooth Neapolitan tubes — wide enough to trap a chunky ragù inside rather than letting it slide off. Made by Garofalo in Gragnano, the pasta town near Naples, from durum wheat semolina.

How to use

Cook in plenty of well-salted boiling water for the time on the pack, drain and finish in the pan with your sauce for a minute so it clings. Excellent with meat ragù, sausage and broccoli, or baked with cheese.
